Don’t you love ❤️ the smell of baked goods. I really enjoy baking and up until nearly two years ago I used to bake with white flour and sugars. I remember when I was younger, around 10 or 11, I used to buy packet cakes and whip up a apple cinnamon cake. It was a great achievement and I was so proud of myself! However over the last two years I’ve discovered so many baking recipes that are healthy, nutritious and don’t use refined sugars or processes flours. Who says’s you can’t have your cake and eat it too.
This banana and strawberry loaf tastes really good. It uses spelt flour, almond meal, eggs, bananas, dates and coconut milk and of course strawberries. I love having the chunky strawberry pieces through the cake, it gives a burst of extra flavour. I’ve had this cake for breakfast ..yes this is a type of cake you can have for breakfast and not feel guilty or you can have it as a snack. A friend of mine who is not into all this so called “healthy food” even told me they couldn’t tell this was super healthy and is starting to ask more questions about the meals I prepare .. Who knows, I might slowly start to help them with changing their thinking about so called healthy foods. Haha!!
