In the past I have always tried to eat as healthy as possible or “healthy” as I thought. My Aunty and Dad would always tell me not to be afraid to add oil to my diet and to stay away from low fat foods, but I didn’t listen. All the marketing hype low fat was the way to go. It is only in the last two years that I’ve realised my Dad and Aunty were right. I now use good oils and have stopped eating low fat foods – they are full of hidden sugars.
This dip would be something I avoided in the past because of the oil content and nuts. However, this dip contains good fats that your body needs and it also taste awesome. It’s even better when you make it yourself, as you know what is added to it, using good quality ingredients. I’m not saying to eat a bowl full but a tablespoon or two added to your dish will make it sweet as.
Dips don’t only have to be eaten with crackers or cheese, I like to add a dollop to a piece of chicken or a tablespoon mixed through my salad. There are endless ideas you can use this dip for, which will give an extra burst of flavour to your meals. Remember we all want our food to taste delicious and adding these extra flavour will leave your taste buds wanting more. The peri peri spice gives it a good kick.
- 2 medium red capsicum
- 1 cup parmesan cheese
- 1/4 cup cashew nuts
- 1/4 cup olive oil
- 1 tablespoon Peri Peri spice mix
- Salt to taste
- Squeeze of lemon juice
- Cut up capsicum into chunky pieces and roast in the oven for 15mins at 200 degrees
- When they are cooked, let them cool
- Add to your food processor and add parmesan cheese, cashew nuts, peri peri spice mix and olive oil.
- Blend until smooth
- Add a pinch of salt and squeeze of lemon juice.
